Monday is No Funday!

After a long and eventful weekend it is back to work we go!  

Last week ended with the boss asking us to join him on an adventure to Wild Dunes for a little bit of Moonshine from our friends at Dark Corner Distillery in Greenville, SC.  I mean, how can you turn that down!  


Then it was off to Columbia for the night to see Grant's Mom, Step-Dad and Sister Kelsey.  It is always great to see them and Rivers loves it because he gets to harass their cats, Jack and Emily.  

Saturday morning we got up early to drive to Greenville for the Eskew Family Christmas.  A little late, I know, but it is a great time to see Grant's aunts, uncles, cousins, and all their little kids.  We typically only see them once a year at this little gathering so it is always fun to see the little ones grow up each year....Then it was back in the car to Columbia where Grant's best man was having his 33rd birthday party.  I should say 3rd birthday party because that is what it ended up being at the end of the night.  Crazy Kids!

After a LONG, Fun Night at Bruce and Wendy's we got up to an even longer trip back to Charleston to be home for Super Bowl Sunday!  Let me 1st mention that it was 80 degree's and BEAUTIFUL here yesterday.  If we didn't have to drive home or go out last night I would have been at the beach relaxing with my book, but instead I was making Guacamole and Football Deviled Eggs.

4 - 5 ripe avocados; chopped (make sure they are a little squishy)

1/2 - medium white onion; diced

1 - medium tomato; diced 
*a little trick Grant taught me yesterday....cut off the top, stick your clean finger inside to release the seeds and liquid so you don't water down your guac. :)

1- handful of cilantro; chopped

2 - tablespoons of lemon juice

And a dash of Salt, Pepper, Hot Sauce, Red Pepper, & Cumin

Mix it all together, but be careful not to smash all the avocados too much.  Then enjoy with some homemade Pita Chips.  (Cut tortillas into triangles, sprinkle a dash of salt, bake on 350 for 15 minutes, and EAT!)

By the way....A little update on the house: As mentioned in a previous post we moved our house up 5 lots from the previous one we had signed.  With this move we lost 2 weeks on the building process and had to go back through and re-sign the hundreds of papers we had already signed, but in the end it was totally worth it.  We now have the LOT, Color, and Backyard that we wanted!  The builder told us last week that he should be breaking ground this week.  They were unable to move the permit for our old lot into the new lots name, so that is what we have been waiting for.  Feels like FOREVER!  Hopefully today or tomorrow we will break down and begin the building process of our NEW HOME. :)
